In my experience, the stuff that is so cheap that you have to buy it whether you need it or not, tends to turn out to be junk or something you don't use 90% of the time. Depends how claustrophobic you are! Many of the solo tents I've had on test have been a very tight fit, although I am 6'4" The Laser comp is ok for me. The Laser Photon is like sleeping inside a coffin. The 1-2p Vaude Power Lizard is like a cathedral in comparison, but it's way over your budget...

The Hubba is a fine 3 season tent for the soloist, although I prefer the Carbon Reflex which is lighter but more expensive. The Hubba HP does a decent job in the winter too. For day trips I use a 15L pack with the chest pack. For 3 season camps, it's a 32L pack and for winter camping, it's a 42L pack.

I'd say 20L would be plenty for Maggies, you'd probably get away with less.

I use the Raidlight Equilibre every time I'm out. It holds my SLR, a map and compass and some food. Very handy and saves me stopping and rooting in my pack every 5 minutes.
